Flourless Brownie Cookies

Lately I've been addicted to making (and eating) these flourless brownie cookies! I slightly modified this amazing recipe because I only had powdered sugar. The cookies are ooeygooey delicious, and this recipe is foolproof! I like to serve mine with a scoop of vanilla ice cream and a healthy drizzle of Trader Joe's sea salt caramel sauce. And repeat.

  • 1/2 cup unsalted butter
  • 1 cup confectioners/powdered sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup + 1 TBS cocoa powder
  • 1/2 cup semi-sweet chocolate chips
  1. Preheat oven to 350ºF.
  2. Combine butter, sugar and egg.
  3. Combine baking soda, salt, and cocoa; add to butter mixture. Stir in chocolate chips. Batter will be a thick frosting-like consistency. (Try not to eat it all before it gets to the oven.)
  4. Scoop onto a parchment-lined baking sheet in rounded spoonfuls. For softer cookies, bake for about 12 minutes. Allow to cool and firm. Makes 1 dozen.
